New Products and more...

I'm always looking for new recipes to try out. I love to cook, but sometimes get in the rut of cooking the same things every week. One of my absolute favorites is a recipe I got from my mother in law. It's called Garden Pasta Bake, and it's DELISH! I love that I can make variations to it, and it be a whole new dish, and that it doens't take too long to make. It's a great back up if you forget to take something out for dinner, or just don't feel like doing much cooking.


Ingredients:
6 oz. penne pasta (actually any pasta will do)
1/2 cup chopped onion
1 Tbsp. butter (I use virgin olive oil instead)
1 can (14 1/2 oz.) diced tomatoes with basil, garlic, & oregano
1 can golden sweet corn drained
1can cut green beans drained
1 can condensed (10 1/2 oz) cream of mushroom soup
2 cup shredded Monterrey jack cheese ( I have also used cheddar)

for variation you can add 2 cup diced ham or chicken


Cook pasta as directed
Cook onion in butter in a 10 inch skillet until tender
Add tomatoes, corn, green beans, and 1/2 of the cheese.
Stir in soup and mix well
Combine pasta with the vegetable mixture.
Season to taste with salt and pepper
Pour into 11x 8 baking dish or casserole dish
Top with remaining cheese.
Bake at 350 degrees for about 10 minutes or until cheese is good and melted (starting to bubble)

If you can not find chopped tomatoes with basil, oregano, and garlic already put together you can use regular roma tomatoes. Then add your spices.


A variation of this that I really like is to use potatoes instead of pasta. YUMMY!
